Anthony is the owner of a family-owned smokehouse in Timoleague that has won several awards for their smoked foods. Anthony spent many years in the world of wine, working in places from from Dublin to France to Spain to Australia, before he was drawn back to his family in Ireland where he setup a wine company in Kinsale. Anthony then decided to help his father, a chicken farmer and fisherman who discovered his love for smoking foods, grow his business. Anthony took over the business from his father in 1998 and built a new smokehouse in 2000. Meet Anthony and learn about the art and science of smoking foods. Their family smokehouse is primarily known for its smoked salmon but also offers smoked chicken, smoked duck, smoked Picanha beef and smoked dry-cured bacon. Meet your host Anthony, a charming Irishman (by adoption!) with a dry sense of humor, at his traditionally-inspired modern smokehouse for a tour and tasting of their award-winning smoked foods. Their family smokehouse smokes high quality, organically-farmed salmon from the west coast of Ireland. You will learn about how Anthony cures his salmon using the wet curing process, the same process that his father started with in the seventies. Discover how oak sawdust renders a smooth and lovely flavor to their smoked salmon before you sit down at a farm table outdoors (weather permitting) to taste a variety of their smoked foods, including their smoked duck which won a 3-star gold award! Your smokehouse tour will last about 45 minutes before you enjoy a tasting of smoked salmon and meats. The duration of the entire tour is 1.5 hours. For an additional cost, Anthony offers an optional cider pairing of three locally crafted ciders – you will taste a variety of ciders, from a dry sparkling to a sweet cider, produced by his brother-in-law at Stonewell Cider.
